I met the beautiful and loving soul named Eunice Hughes through my wife Roberta, who worked with her at HonPub. I was a young soldier at the time, assigned to the 1/21 Infantry Regiment at Schofield Barracks in 1985. We hit it off instantly and enjoyed our frequent visits. Eunice unofficially "adopted" me, and often invited us over for dinner. During our first meeting, she had discovered my love of Korean Kal-Bi; from then on, regardless of what else was on the menu, Eunice always prepared some Kal Bi to serve with the other culinary treats. For me; because she knew it was my favorite. What a sweetheart she was. We kept in touch through the years, and every year during the holiday season I always looked forward to her thoughtful gifts and Christmas letters. I still cherish the miniature Katana and traditional bow ("Boys Day" gifts) she presented to me while we still lived on Oahu. Oh, Eunice, I pray you are at peace and I look forward to seeing you once again, on the 'other side'. Aloha, sweet Lady.
